What Is Frozen Custard?
Frozen Custard is a gourmet ice cream treat that first originated on Coney Island. Frozen Custard must contain at least 10 percent butterfat and 1.4 percent egg yolk. Typically, Frozen Custard is made hourly and served at 18 degrees whereas traditional ice cream is made at 20 degrees, flash frozen to minus 10 degrees, and stored at minus 20 degrees. During the freezing process the volume of ice cream can be increased (often doubled) by the beating of air into the mixture. This creates ice cream with a “weak” flavor profile and coarse texture. Freckles uses a special machine that creates a frozen dessert with very small ice crystals. Smaller ice crystals, low air content, and freshness translate into the smoothest, tastiest frozen dessert you have ever had!
